After soaking, rinse the mussels under cold running water, gently scrubbing them with a brush to remove any impurities from the shell. In a large pot, add a generous amount of olive oil and place the pot over medium heat. Arrange the mussels in the pot, being careful not to overcrowd them to allow the heat to circulate evenly. It is recommended to add them in batches if necessary.

After you have thrown the mussels into the hot oil, cover the pot with a lid for about 5-7 minutes. This will help the mussels open up and absorb the flavor of the olive oil. During this time, you can add extra flavors, such as a few crushed garlic cloves, chili peppers, or fresh herbs like parsley or coriander. Once the mussels have opened, it’s time to add a splash of dry white wine, which will enhance the flavors and add a delicate taste.

Let the dish simmer gently for a few minutes, allowing the flavors to combine perfectly. Once the mussels are fully open, remove the pot from the heat. Serving should be prompt to enjoy the freshness of the mussels. You can place them in a deep bowl, drizzle with a bit of freshly squeezed lemon juice, and sprinkle with finely chopped parsley.  Ingredients: 2kg mussels, 2-3 red bell peppers, 600-800 ml dry white wine, 10 cloves of garlic, 1 chili, half a stalk of celery, 1 onion, rosemary, thyme (preferably fresh), parsley, lemon juice, linguine, olive oil, 500 ml tomato sauce.
