Alsatian pie
Take 500 grams of flour, which is the basic ingredient for obtaining a fine and elastic dough. In a large bowl, add the flour along with a pinch of salt, about a teaspoon, which will help enhance the flavor of the dish. Then, make a well in the middle of the flour, where you will add the yeast. Use 25 grams of fresh yeast, which you will crumble gently with your fingers to allow it to activate. Over the yeast, pour 300 milliliters of lukewarm water, which should not be hot, so as not to destroy the yeast. Now, add 50 milliliters of olive oil, which will bring a richer flavor to the dough and contribute to its fluffy texture.
Mix the ingredients with a spatula or with your hands until a homogeneous dough forms. Then, knead the dough for about 10 minutes on a floured surface until it becomes elastic and smooth. After you are done, place the dough in a clean bowl, cover it with a damp towel or plastic wrap, and let it rise for 30 minutes in a warm place. The dough will rise considerably, having an airy texture.
After the rising time has passed, roll out the dough on a floured surface using a rolling pin until you obtain a thin sheet, about 0.5 cm thick. If the sour cream you have is too thick, you can dilute it with a little water or milk to achieve a more fluid consistency that is easy to spread on the dough. Spread the sour cream evenly over the surface of the dough, leaving a margin of a few centimeters on all sides.
Now, you can add additional ingredients such as grated cheese, olives, fried bacon, or vegetables to enhance the flavor of the dish. Roll the dough tightly, then cut it into desired slices, placing them in a baking tray lined with parchment paper. Let them rise for another 15 minutes, then bake them in a preheated oven at 180 degrees Celsius for about 25-30 minutes until they become golden and crispy. Enjoy these delicious dishes warm, accompanied by a fresh salad or as an appetizer with a glass of wine.
