Panettone Muffins
In a generous bowl, start by adding the flour, which will be the base of your delicious muffins. Make a well in the center of the flour and add the crumbled yeast. It is essential to use fresh yeast to achieve a fluffy texture. On top of the yeast, add a teaspoon of sugar, which will help activate it, and five tablespoons of lukewarm milk, which will provide an optimal environment for rising. Mix with a wooden spoon or your fingers until the ingredients are well combined, then let the mixture sit for 15 minutes, during which the yeast will start working wonders and create bubbles of air.
After the rising time has passed, add the remaining sugar, melted butter, beaten egg, and vanilla sugar to the flour mixture. This combination will bring a refined taste and irresistible aroma to the muffins. Knead the dough well with your hands until it becomes elastic and homogeneous, then cover it with a clean towel and let it rise again for 30 minutes in a warm, draft-free place.
Meanwhile, prepare the muffin molds by greasing them with margarine to prevent sticking. Once the dough has risen nicely, incorporate the raisins, almonds, and diced Turkish delight. These ingredients will add a crunchy texture and sweet flavor, turning the muffins into a real treat. Fill the molds with dough, being careful to fill them only two-thirds full to allow the muffins to rise beautifully during baking.
Let them rise for another 15 minutes, then preheat the oven to 180 degrees Celsius. Before putting them in the oven, brush the surface of the muffins with a beaten egg yolk, which will give a golden and shiny color, and sprinkle powdered sugar on top for an attractive appearance. Bake the muffins for 20-25 minutes until they are golden brown and baked through. Test them with a toothpick, and if it comes out clean, the muffins are ready.
After removing them from the oven, let them cool slightly, then you can brush them with honey and dust them with ground almonds and chocolate flakes for a delicious finishing touch. Enjoy these fluffy muffins for breakfast or as a snack, alongside a cup of tea or coffee!
Ingredients: 280 grams of flour, 10 grams of yeast, 80 grams of sugar, 125 ml of milk, 125 grams of soft butter, 1 egg, 1 packet of vanilla sugar, 40 grams of ground almonds, 40 grams of raisins, 60 grams of Turkish delight (I used Fruit Mix from SanoVita), 1 egg yolk, 1 tablespoon of powdered sugar.
