Greek-style chicken soup
To prepare a delicious chicken soup, the first step is to prepare the meat. We wash the chicken well under a stream of cold water, then cut it into smaller pieces that will cook evenly. In a large pot, we put enough water to cover the meat, add a pinch of salt, and let it boil. Along the way, we make sure to remove the foam that forms on the surface to obtain a clear and savory broth.
Meanwhile, we take care of the vegetables. We grate the celery, and the carrots, bell pepper, and onion are cut into suitable cubes. These will add a special flavor to the soup and contribute to a pleasant texture. Once the chicken has started to boil, we add the chopped vegetables to the pot, stirring gently to distribute them evenly. We cover the pot and let everything simmer over medium heat, allowing the flavors to blend.
After about 20-25 minutes, when the meat is half-cooked, we add the washed rice, which will give the soup consistency. We stir again and let everything simmer on low heat, being careful not to let the rice stick to the bottom of the pot. The soup will take on a delicious appearance, and the aroma will fill the entire kitchen.
When all the ingredients are cooked, we take a ladle of the warm soup and let it cool slightly. This cooled soup will be used to prepare a tasty mixture with the egg yolks and sour cream. In a bowl, we beat the egg yolks well, then gradually add the sour cream, stirring continuously to obtain a homogeneous composition. We also add the cooled soup, continuing to mix. This step is essential as it will help us thicken the soup and give it a creamy texture.
After the mixture is well homogenized, we pour it over the hot soup. With a wooden spoon, we gently stir to integrate all the ingredients. We season with salt and pepper to taste, allowing the soup to come to a few more boils. The aroma of the soup will become increasingly appetizing.
Finally, we add freshly squeezed lemon juice, which will provide a pleasant contrast to the rich taste of the soup. We sprinkle chopped parsley on top for an extra touch of freshness and color. The chicken soup is now ready to be served. Enjoy your meal!
