Ingredients:
- 500 g eggplant (preferably roasted)
- 1 medium onion
- 2 cloves of garlic
- 100 g breadcrumbs
- 2 eggs
- 50 g feta cheese (optional, for a more intense flavor)
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of sweet paprika
- Oil for frying (preferably sunflower or olive oil)

Preparing the eggplant:
If you are using frozen eggplants, make sure to let them thaw completely and then place them on a grill or a baking tray in the oven to roast. This process will intensify their flavor. Roast the eggplants at 200°C for 30-40 minutes, until they become soft and can be easily peeled. Once roasted, let them cool slightly, then remove the skin and mash the pulp in a large bowl.

Preparing the meatballs:
1. Peel the onion and garlic, then chop them finely. Heat a tablespoon of oil in a pan and sauté them over medium heat until they become translucent, about 5 minutes. This step will add a delicious caramelized flavor to the meatballs.

2. In the bowl with the mashed eggplant, add the sautéed onion, garlic, breadcrumbs, eggs, and, if you choose, crumbled feta cheese. Season with salt, pepper, and sweet paprika. Mix well until you obtain a homogeneous mixture. If the mixture is too wet, you can add a little more breadcrumbs.

3. Form the meatballs using your palms, making sure to give them a round or disc shape. Place them on a plate and refrigerate for 15-20 minutes. This step helps the meatballs firm up and maintain their shape during frying.

4. In the meantime, heat the oil in a deep pan. Check the oil temperature by dropping a small amount of the mixture; if bubbles form, it is ready for frying.

5. Fry the meatballs on each side for 3-4 minutes or until they become golden and crispy. Place them on a paper towel to absorb excess oil.

Serving:
Eggplant meatballs can be served hot, alongside a fresh salad of tomatoes and cucumbers or with Greek yogurt seasoned with dill and garlic. For a touch of originality, you can add green or black olives, or even freshly chopped parsley to the meatball mixture.
