Plum Chutney
To prepare a delicious plum jam with subtle flavors, start by washing the plums thoroughly. Make sure they are fresh and of good quality, as the final taste of the jam largely depends on the fruits used. After washing them, use a towel to carefully dry them, removing any excess water. Using a sharp knife, remove the pits and cut the plums into small pieces, being careful to weigh exactly 1.2 kilograms, to achieve the perfect balance between sweet and tart in your composition.
In a medium-sized pot, add the peeled and finely chopped ginger, along with the onion and garlic, which should also be finely chopped. These ingredients will provide an unmistakable fragrance to your jam. Add the sugar, which will help caramelize the mixture. Place the pot over medium heat and let the ingredients combine, stirring occasionally. Watch the caramelization process closely, as you want the sugar to take on a golden hue without burning.
Once the mixture has taken on a slight golden color, add the chopped plums, vinegar, bay leaves, cloves, ground cinnamon, juniper berries, and marjoram. The heat should be low, allowing the ingredients to simmer slowly and develop flavors. Boil the mixture for about 30 minutes, stirring occasionally, until the liquid thickens and starts to separate on the surface.
While the mixture is boiling, prepare the jars. Wash them well and sterilize them by boiling or through a cycle in the oven. Once the jam is ready, carefully pour it into the sterilized jars, ensuring it is piping hot. Seal the jars immediately to retain the flavors and prevent contamination. After sealing, place the jars lid-down on a towel or between blankets to cool slowly. This method will help create a vacuum, ensuring optimal preservation. Once completely cooled, you can store them in the pantry, where they will patiently wait to be enjoyed alongside a slice of fresh bread or as a secret ingredient in various desserts.
