Chocolate Muffins
To prepare some delicious and fluffy muffins, we start by organizing the necessary ingredients so that the cooking process is as pleasant and efficient as possible. In a small bowl, we carefully measure all the liquid ingredients: 250 ml of fresh milk, 100 ml of natural orange juice, and 80 ml of sunflower oil, which will provide a subtle taste and a soft texture. These are mixed well until the mixture becomes homogeneous and even. In another bowl, we will begin to prepare the solid ingredients. We sift 300 grams of flour together with 10 grams of baking powder, 150 grams of sugar, a pinch of salt, and the grated zest of an orange. The orange zest will add an intense flavor that will transform the muffins into a delight.
After the solid ingredients are well mixed, we pour the liquid mixture over them. It is important to mix only until homogeneous, being careful not to overmix the dough, as this will make our muffins fluffier. This is an essential trick that many chefs know. Once the dough is ready, we pour it into the muffin molds, filling them up to ¾ of their height. Each mold will receive a piece of chocolate, which will add a sweet surprise in the middle of each muffin.
If you notice that there are empty spots in the muffin tray, fill them with water to ensure even baking, which will help the muffins not to dry out. It is important to bake the muffins immediately after mixing the dough to maintain the airy texture. Place the tray in the preheated oven at 180 degrees Celsius and let them bake for 20-25 minutes. Check if they are baked using a toothpick; if it comes out clean, the muffins are ready. Be careful not to leave them in the oven too long, as they can brown excessively and become dry. After removing them from the oven, let them cool for 5 minutes in the tray, then transfer them to a rack to cool completely. These muffins can be served warm, with a sprinkle of powdered sugar on top, or cold, being perfect for breakfast or snacks. Enjoy!
