Rose Apple Tart
I recently made these mini tarts, which, besides being absolutely delicious, also have a special appearance, making them ideal for any occasion. Preparing them is a true pleasure, and the aroma of apples and cinnamon will fill the entire kitchen. The first step is to choose the apples. I prefer tart apples, as they pair perfectly with the sweetness of brown sugar. The apples are not peeled; it is enough to wash them well and wipe them with a clean towel. After that, we cut them into quarters, removing the core with seeds, and slice them thinly.
In a bowl, we prepare a syrup from the juice of half a lemon, 2-3 tablespoons of brown sugar, and a pinch of cinnamon. This mixture will add a rich flavor to the apples. Once we have prepared the syrup, we add the apple slices and mix them well, so they are evenly coated in syrup. Then, we microwave the apples for about 50 seconds or until they become slightly soft, which will help intensify their flavor. It may be necessary to do this step in two batches, depending on the amount of apples.
While the apples cool, we take care of the dough. A sheet of puff pastry is rolled out, which we cut into narrow strips about two fingers wide and 20-25 cm long. For added flavor, I also spread some quince jam on the sheet before adding the apple slices. Then, we start rolling the strips, forming delicate rosettes. These can be placed in muffin tins, and for a more elegant presentation, we can use paper cups in some and bake them directly in others. My observation was that those without paper browned more beautifully, and the heat penetrated better.
After arranging all the rosettes in the molds, we preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and bake them for about 25 minutes. When the tarts are golden brown and emit an inviting aroma, we take them out of the oven and let them cool slightly. These mini tarts are perfect to be served warm or at room temperature, and each bite will bring a smile to the faces of those who taste them. This recipe will surely become one of your favorites!
