Polenta Dumplings
Polenta is a traditional Romanian dish, full of flavor and aroma, that can be enjoyed in various ways. Today, we will learn how to prepare a quick polenta, which will serve as the base for delicious cheese dumplings. It is a simple recipe but full of taste, perfect for serving on cool days or as a side dish to various meals.
To begin, gather all the necessary ingredients: cornmeal, water, salt, butter, and cheese. In a pot, pour in the water and put it on the heat, letting it boil. When the water starts to boil vigorously, add the salt, making sure to distribute it evenly. Then, start sprinkling the cornmeal in a rain-like fashion, being careful to stir continuously with a wooden spoon. It is important to do this step patiently to avoid lumps forming.
After you have added all the cornmeal, let the mixture boil for 5-10 minutes, stirring constantly. You will notice how the polenta thickens and becomes consistent, so that the spoon stands upright in the middle of it. Finally, add the diced butter and cheese, keeping some aside for later use. Mix well until the ingredients are homogeneous. It is recommended to cook the polenta over low heat to avoid burning and developing an unpleasant taste.
When the polenta is ready, let it cool slightly, then start forming the dumplings. Grease your palms with oil and take a spoonful of polenta, shaping it carefully. In each dumpling, make a dent and add a little of the cheese you saved, about 1/2 teaspoon. Then, reshape the dumpling, ensuring that the cheese is well enclosed in the polenta.
After you have finished shaping the dumplings, prepare a bowl with beaten egg and another one with a mixture of breadcrumbs and grated cheese. Dip each dumpling first in the egg and then in the breadcrumb mixture, making sure they are evenly coated to achieve a crispy crust.
In a pan, heat the oil and brown the dumplings on all sides until they become golden. Once they are ready, remove them to absorbent paper to eliminate excess oil. Keep them warm and serve them hot, alongside sour cream, to further enhance the flavors. This recipe for cheese dumplings will surely become a family favorite. Enjoy your meal!
