- 2 tablespoons olive oil (or sunflower oil)
- 1 small onion, finely chopped
- 2-3 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon sugar (to balance the acidity of the tomatoes)
- Freshly ground pepper, to taste
- Optional: 1 tablespoon balsamic vinegar or lemon juice for a tangy flavor
Preparation:
1. Prepare the ingredients: Start by washing the tomatoes well and cutting them into large pieces. It’s important to choose ripe tomatoes, as they will provide a richer taste to the sauce. Also, wash the chili peppers and slice them lengthwise, removing the seeds if you prefer a milder sauce.
2. Sauté the onion and garlic: In a deep skillet, heat the two tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. Then, add the minced garlic and continue to cook for one minute, being careful not to burn it.
3. Add the tomatoes and chilies: Place the chopped tomatoes and chili peppers in the skillet. Sprinkle salt to extract the juice from the tomatoes and intensify the flavors. Stir well to combine the ingredients.
4. Cook the sauce: Let the sauce simmer over low heat for about 20-25 minutes. Stir occasionally to prevent sticking to the bottom of the skillet. The sauce will start to thicken, and the flavors will concentrate.
