Roasted Cream
To prepare this delicious fried cream recipe, start by gathering all the necessary ingredients and ensuring you have the right utensils at hand. In a large bowl, mix the egg yolks with the sugar, using a whisk or hand mixer, until the mixture becomes creamy and a deep yellow. Then add the flour and cornstarch, mixing carefully to avoid lumps. A pinch of salt will help balance the sweetness, and the grated lemon zest will bring a fresh aroma and a citrus note that will enhance the flavor.
Once you have a homogeneous mixture, begin to gradually incorporate the warm milk, adding a little at a time and stirring constantly. This step is crucial for achieving a smooth and creamy texture. After you finish adding the milk, place the pot over medium heat, ensuring it is not too high to prevent burning the mixture. Stir continuously with a wooden spoon, making sure it does not stick to the bottom of the pot. You will notice that in a few minutes, the mixture begins to thicken, becoming similar to a thicker pudding. When you reach the desired consistency, remove the pot from the heat.
Immediately pour the cream onto a platter or tray, being careful to distribute it evenly so that it has a thickness of 1.5 - 2 cm. Allow the cream to cool to room temperature, and then, when it is completely set, cut it into strips about 2 cm wide, which you will later transform into squares or diamonds.
To fry the pieces of cream, prepare a bowl with beaten egg whites. A ratio of about 2 egg whites for every half of the cream mixture will be used, ensuring they are well incorporated. Then, dip each piece of cream into the beaten egg whites and then into the breadcrumbs, making sure they are evenly coated. In a pan, heat the oil to a suitable frying temperature. When it is well heated, carefully add the cream pieces, frying them on both sides until golden and crispy. After removing them from the pan, place them on a paper towel to drain the excess oil. These delicious cream fritters are perfect to be served as a dessert, with a dusting of powdered sugar on top or simply plain, to savor every bite.
