To prepare a refined and delicious dessert, we start by creating a delicious syrup from halva. In a saucepan, we add 100 g of sugar, enough water, and halva broken into small pieces. We bring this mixture to a boil, stirring constantly, until the sugar is completely dissolved and the halva softens, forming a homogeneous syrup. It is important to pay attention to the consistency of the syrup, which should be slightly viscous but not too thick. Once the syrup is ready, we let it cool slightly before using it.

In a large bowl, we beat the egg yolks with the three tablespoons of sugar and a pinch of salt. Using a mixer or a fork, we continue to mix until the mixture turns white and fluffy. It is essential to incorporate air into the mixture to obtain a light and easily blendable cream. Gradually, we start adding the halva syrup, stirring constantly. This will transform the mixture into a long and velvety cream, full of flavor.

To add a note of freshness and texture, we make whipped cream from sour cream, adding a packet of stabilizer and vanilla sugar, beating until firm peaks form. This whipped cream will balance the sweetness of the halva cream. Using a spatula, we gently fold the whipped cream into the egg yolk cream, being careful not to lose the airiness. The mixture should be light and airy.

Once the cream is well combined, we prepare a baking mold, either ceramic, metal, or silicone, which we line with cling film. This will help us remove the dessert more easily after it has frozen. We pour the resulting mixture into the mold, smoothing the surface. Then, we place the mold in the freezer and let it cool for a few hours until it is completely firm.

While we wait for the dessert to freeze, we take care of the chocolate sauce. In a small saucepan, we add pieces of good quality chocolate and cream. We place it over low heat, stirring constantly, until the chocolate is completely melted and the mixture becomes homogeneous. We let the sauce cool slightly so it is not too hot when we add it over the ice cream.

After a few hours, we take the dessert out of the freezer, carefully remove the cling film, and pour the melted chocolate sauce on top. The dessert is now ready to be served, cut into beautiful portions, and enjoyed with loved ones. This combination of halva, egg yolks, and chocolate will surely impress, offering an unforgettable culinary experience. Enjoy your meal!
