Brain with cheese
Ingredients: 200 g brain, 1 tablespoon butter, 1 medium onion, 250 g sour cream, 100 g grated cheese, salt
Beef brain is a refined but often underestimated ingredient in Romanian cuisine. Preparing it requires special attention, but the final result is a delicious dish that can impress any guest. We start by cleaning the brain of membranes, an essential process to achieve a fine and pleasant texture. Once cleaned, the brain is boiled in a pot of water, to which we add a teaspoon of salt and about half a tablespoon of vinegar. The vinegar helps maintain a clearer color of the brain and gives it a pleasant acidity.
We let the brain boil for about 10 minutes, being careful not to overheat it, as it can become streaky. After boiling, we remove the brain from the water and let it cool. Once cooled, we drain it well and chop it finely. This is the stage where the flavor and texture of the brain intensify, preparing it for cooking.
In a pan, we finely chop an onion and sauté it in butter until it becomes golden and glassy. This will add a special flavor to our dish. Once the onion is ready, we add the chopped brain and let everything cook for two minutes, stirring constantly. Finally, we season to taste, being careful not to overdo it, as the sour cream and cheese on top will also add a bit of salt.
For assembly, we grease a ceramic or yena dish with a little canola oil to prevent sticking. We carefully place the brain and onion mixture in the dish, smoothing it out. On top, we pour rich sour cream, which will enrich the dish with extraordinary creaminess. The last step is to sprinkle grated cheese, which will form a delicious crust when baked.
We preheat the oven to 180 degrees Celsius and place the dish in for about 15 minutes. This is the perfect time to prepare a simple side, such as cubes of bread toasted in butter, which we can flavor with crushed garlic and salt. This detail will add a crunchy texture and a pleasant contrast to the creaminess of the brain dish.
When serving, we can add extra sour cream or a horseradish sauce, which will enhance the flavors and provide a touch of freshness. This recipe is perfect for making the most of leftover brain, especially after a breaded frying, transforming it into a sophisticated and tasty dish that will delight any table.
