We peel the potatoes and cut them into slices, as shown in image 2. We clean, wash, and cut the bell pepper, onion, and garlic as desired (into cubes, julienne, small pieces, etc.). We cut the ham or any other cold cuts available (salami, sausages, or smoked bacon work too). I used about 100 grams of ham and two pieces of sausages. We prepare a pot and place it on the stove. We heat the oil and sauté the onion. We add the ham and bell pepper and let the flavors develop. We add the potatoes, mix them, and cover them with water (just enough to cook them, see image 5). We put the lid on and let them boil; when the potatoes are almost done, we add the mushrooms and garlic, mix, and cover with the lid, allowing them to continue cooking on low heat. We prepare the tomato (peel and cut it into small cubes) and add it to the potatoes. We let it cook for about 5 more minutes. Serve on a plate, sprinkle with chopped fresh parsley, and..... ENJOY!!! If they are fresh, then a larger quantity is needed and they should be added earlier.
