The history of savarins is fascinating. These rustic-looking pastries are often associated with celebrations and sweet indulgence. Their delicate structure and rich filling make them a beloved dessert in many corners of the world. Each bite is an explosion of flavors, and the combination of whipped cream and sweetness makes them irresistible.

Ingredients:
For the dough:
- 1 egg
- 200 ml warm milk
- 2 tablespoons sugar
- 3 tablespoons oil
- 15 grams fresh yeast
- 250 grams flour

For the syrup:
- 400 ml water
- 250 grams sugar
- 1 lemon essence (or lemon juice)

For filling and decorating:
- 500 ml liquid cream
- 4-5 tablespoons strawberry jam
- Strawberry topping (fresh or frozen)

Preparing the savarins:
1. Start by dissolving the yeast in 50 ml of warm milk. Gently mix and set aside for a few minutes until it becomes frothy. This step is essential for activating the yeast, so don’t skip it.

2. In a large bowl, add the flour, sugar, egg, oil, and the rest of the milk. Add the dissolved yeast in the center of the flour. Use a spatula or wooden spoon to mix the ingredients. You will get a sticky dough, but don’t worry, that’s normal.

3. Cover the bowl with a clean towel and let it rise in a warm place for about 1 hour or until the dough doubles in volume. If you forget about it, don’t panic! A longer rise can enhance the flavor – just like it happened with me!

4. Preheat the oven to 170 degrees Celsius. Prepare the molds for the savarins (if you don’t have specific molds, you can use muffin tins, as I did). Grease them well with oil to prevent sticking.

5. Once the dough has risen, use a spoon to divide the dough among the prepared molds, filling each mold about halfway. Let them rise again for a few minutes before putting them in the oven.

6. Bake the savarins for 20-25 minutes, until they turn golden. Make sure to watch them closely in the last minutes of baking to avoid burning.

7. Once done, let them cool completely on a rack. This step is crucial to prevent the whipped cream from melting when you fill them.

Preparing the syrup:
1. In a saucepan, combine the water and sugar and bring to a boil. Stir until the sugar completely dissolves. This is the moment to add the lemon essence, which will give a fresh and aromatic flavor.

2. Let the syrup cool slightly. It’s important that the syrup is not hot when you dip the savarins, otherwise, they will become too soggy.

3. Once the savarins have cooled, dip each one in the syrup for about 30 seconds. This step will make them absorb the ideal amount of syrup, giving them a moist and delicious texture.

Filling and decorating:
1. Whip the cream with a mixer on high speed until it becomes firm. It’s important not to overwhip it, or it will turn into butter!

2. Use a piping bag to fill each savarin with whipped cream. Each pastry should be filled with goodness, and its appearance should be tempting.

3. Place the tops on each savarin and spread them with strawberry jam. The jam will add extra flavor and an attractive look. You can also use other types of jams to vary the recipe.

4. For a finishing touch, decorate with fresh strawberry topping. They not only look wonderful but also add a hint of acidity, balancing the sweetness of the savarins.

Helpful tips:
- Use room temperature ingredients to improve the texture of the dough.
- If you want to add a chocolate note, you can mix in some chocolate chips into the savarin dough.
- Savarins keep well in the refrigerator for the following days, but they are best enjoyed fresh.
- You can serve savarins with a cup of strong coffee or aromatic tea.
