To prepare a delicious potato roll with spinach and ricotta cheese filling, start by cooking the potatoes. Choose medium-sized potatoes, peel them, and boil them in salted water. Let them cook for about 20-25 minutes or until they are completely cooked and easily pierced with a fork. Once the potatoes are ready, drain them and pass them through a sieve to obtain a fine puree. Then add the butter cut into small pieces, so that it melts easily and incorporates into the puree. Use an electric mixer with spiral beaters to mix the ingredients until you achieve a homogeneous, creamy composition.

After the potato puree has cooled slightly, begin to add the flour gradually, dividing it into four stages. Add the salt and continue mixing until the dough becomes elastic but not too soft, so you can roll it out with a rolling pin. Cover the work surface with a sheet of parchment paper sprinkled with flour to prevent the dough from sticking. Roll out the dough with a rolling pin until you obtain a sheet about 0.8 cm thick.

On this rolled-out sheet, add a generous layer of fresh or frozen spinach that you have cooked earlier, then add a layer of ricotta cheese. You can choose to arrange them in your preferred order, but make sure the ingredients are evenly distributed. Using the parchment paper, start rolling the dough carefully, forming a tight roll, but not too compact, to allow for expansion during baking.

Place the roll in a rectangular baking dish, which should be close in size to the length of the roll. Before placing the dish in the oven, preheat it to a moderate temperature. Beat an egg in a bowl and use it to brush the surface of the roll, giving it an enticing color during baking. You can add coarse salt crystals or sesame seeds, depending on your preferences, for an extra touch of flavor and texture.

The roll bakes for 30-35 minutes, but it is important to check its state periodically, as the baking time may vary depending on the oven. When it turns golden and has a tempting crust, remove the dish from the oven and let it cool in the dish. Before serving, you can add a sauce of your choice, and we recommend a hot ketchup that pairs perfectly with the flavors of the roll. This dish will not only impress with its appearance but also with its savory taste, making it ideal for both a family lunch and a festive meal.
