To prepare a delicious suberec recipe, the first essential step is to prepare the dough. In a large bowl, gradually add water and flour, mixing them with a spatula or by hand until you achieve a uniform composition. It is important that the dough is well-kneaded so that it becomes elastic and easy to handle. The ideal consistency should not be too hard, but also not too soft, rather a perfect compromise between the two. Once the dough is ready, it is divided into smaller pieces, cut into long and thick strips, which will later be transformed into balls.

These dough balls are rolled out with a rolling pin on a surface sprinkled with flour, making sure to obtain round and thin sheets. It is essential to ensure that the sheets have a thickness of no more than 3-4 mm, so they do not become too thin. From the mentioned quantities, we should manage to obtain between 20 and 21 round sheets, ideal for filling.

While the dough rests, we take care of the filling. The onion is finely chopped so that its aroma integrates perfectly into the meat composition. Then, the minced meat is well mixed with the onion, pepper, salt, and egg until we obtain a homogeneous and well-seasoned mixture. This filling will give the suberec a savory taste.

To form the suberec, take each rolled-out sheet and add a tablespoon of the meat mixture on half of the sheet. Carefully fold the other half over the filling, and about one centimeter from the edge, press with your fingertips to seal well. Using the edge of a small plate, cut the dough 1 mm from where it was pressed, removing the unused edges.

For frying, heat oil in a pan, with a depth of about 2-3 cm. It is important that the suberec is not completely covered by oil, but is fried evenly on both sides until it becomes golden and crispy. Once the suberec is ready, it can be served warm, alongside sour cream or a yogurt sauce, to enhance the flavor. This recipe not only provides a tasty dish but also a pleasant cooking experience, perfect for moments spent with family or friends.
