Peas are a delicacy with deep roots in history, apparently originating from the territories of China, where they were cultivated about 4000 years ago. This vegetable has traveled through time and reached Europe about 2000 years ago, being considered a true delicacy at royal tables in the Middle Ages. The small green pea not only enriches meals with its sweet and fresh taste but also brings a multitude of health benefits. It is full of protein, essential vitamins such as vitamin A, niacin, ascorbic acid, and thiamine, as well as important minerals like potassium, iron, and zinc.

Next, I will present my recipe for green pea dish, a savory recipe that can be served both as a vegetarian main course and as a delicious side dish. I used fresh peas, and from 3-4 kilograms of pods, I obtained about 1.35 kilograms of beans. It is essential to use fresh peas to achieve optimal flavor. We start by slicing the leeks and carrots. In a pan, we sauté the leeks for 4 minutes, then add the carrots, continuing to sauté the mixture over medium heat for another 4 minutes until the vegetables become slightly tender.

If leeks are not to your liking, you can replace them with any type of onion, whether white or red. Personally, I choose leeks because of their distinct sweetness, which perfectly complements the flavors. After the vegetables are ready, we chop the celery and beet into small cubes, which we add to the pan, sautéing them together with the leeks and carrots for 5 minutes. We season with turmeric, curry, and salt to enhance the dish's flavor.

The next step is to add the peas and enough warm water to cover the vegetables in the pot. We let it boil over medium heat for 10 minutes, ensuring that the peas cook evenly and retain their crunchy texture. Meanwhile, we prepare a sauce from millet flour and tomato juice. This will add a creamy consistency to our dish. We add the sauce to the pot and mix well to integrate all the ingredients. We let it boil a few times, and before serving, we season again with salt to taste and sprinkle finely chopped dill for an extra touch of fresh flavor.
