After that, we add melted and warm butter and knead until we obtain a homogeneous and fluffy dough like that of a sweet bread. We let it rise in a warm place, covered with a damp and warm towel. For the walnut filling, we proceed as follows: we grind the walnuts, and we beat the egg whites with 3 tablespoons of sugar until foamy. We mix the ground walnuts with the egg whites using a spatula. For the apple filling, we peel the apples, wash them, and grate them using a large grater, drain them of their own juice, and put them in a small pot to sauté with 5 tablespoons of sugar and a teaspoon of cinnamon. When the apples are softened, we let them cool. For the cinnamon cream, we mix cinnamon, nutmeg, 3 tablespoons of sugar, and softened butter at room temperature until we obtain a homogeneous cream. For the chocolate filling, we use Nutella and chocolate. When our dough has risen, we turn it out onto a floured surface, divide it into 3 equal parts, roll out one sheet, fill it with what we desire (cinnamon cream, apples, chocolate, or walnuts), roll it up, and with a knife, we cut the roll (but not all the way, leaving 2 centimeters) and twist the ends like spirals, then we braid them, cut the remaining 2 centimeters and braid them as well.
