Easter Drobul – A Traditional Delicacy

Drobul is an iconic recipe for the Easter holidays, being a savory dish full of tradition in Romanian cuisine. This delicious dish, which combines the flavors of lamb organs with fresh herbs, is often prepared for Easter and is proudly served on festive tables. Let’s discover together how we can prepare this lamb drob in a simple and enjoyable way, preserving all the essence of authentic taste.

Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Number of servings: 8

Ingredients

- 500g beef liver
- 500g lamb kidneys
- 2 bunches of green onions
- 2 bunches of fresh parsley
- 2 bunches of fresh dill
- 3 boiled eggs
- 2 raw eggs
- Oil for sautéing
- Salt and pepper to taste
- Margarine for greasing the pan

Step by step – How to prepare the perfect drob

1. Preparing the organs
Start by thoroughly washing the liver and kidneys. Make sure to clean them well, removing any impurities. Boil them in a pot with water and a pinch of salt. This step is essential to remove any specific odor and to prepare the ingredients for a pleasant taste.

2. Chopping and sautéing the ingredients
After boiling, drain the water and let the organs cool slightly. In the meantime, finely chop the green onions, parsley, and dill. Heat a bit of oil in a pan and add the chopped vegetables. Sauté them until they become translucent and release their aroma, about 5 minutes. Add the prepared organs, chopped finely, and sauté everything for another 2-3 minutes.

3. Mixing the composition
Once the mixture has cooled, use an electric mixer or a meat grinder to turn the composition into a fine paste. Add the two raw eggs to the mixture, along with salt and pepper to taste. Mix well to integrate the ingredients.

4. Preparing the pan
Grease a loaf pan with a layer of margarine. This step will help the drob not stick to the pan and come out easily after baking.

5. Assembling the drob
Place half of the drob mixture in the prepared pan. Use a spoon to create three indentations where you will place the boiled, peeled eggs. Cover the eggs with the remaining mixture and level it well.

6. Greasing and baking
If you wish, you can brush the drob with a little beaten egg for a golden crust. A delicious alternative is to wrap the drob in lamb caul, which will add extra flavor. Place the pan in a preheated oven at medium heat (about 180°C) and let it bake for 30 minutes.

7. Cooling and serving
After baking, let the drob cool slightly before slicing it. It is delicious both warm and cold, and can be served as an appetizer or main dish alongside a fresh green salad.

Practical tips

- Fresh ingredients: Choose fresh, quality ingredients to achieve the best results. The lamb organs should be fresh, and the herbs should be vibrant and crisp.
- Variations: You can add chopped green or black olives for a more intense flavor or replace the green onions with regular onions, depending on your preferences.
- Serving: The drob is wonderful served with garlic sauce or with a beetroot salad, which adds a contrast of flavors and colors.
- Beverages: A bottle of dry white wine pairs perfectly with the drob, but you can also opt for herbal tea for a lighter option.

Nutritional benefits

Drobul is an excellent source of protein, iron, and B vitamins, due to the organs used. Additionally, the herbs add a supply of antioxidants and essential nutrients.
