3. Nut layer:

- 3 tablespoons sugar
- 2 tablespoons flour

For the syrup:
- 50 g sugar
- 50 ml water
- 40 ml rum essence (about 2 vials)
For the vanilla cream:
- 600 ml milk
- 1 vanilla pod (or 1-2 tablespoons vanilla essence)
- 200 g sugar
- 100 g flour
- 3 eggs
Preparation
Step 1: Preparing the Layers
1. Vanilla layer:
- Start by preheating the oven to 180°C. Choose a 28 cm diameter cake pan and line it with baking paper.
- Separate the egg whites from the yolks. In a bowl, beat the egg whites with a pinch of salt until they form a stiff foam. Gradually add the sugar and continue mixing until you achieve a glossy, stiff foam.
- Incorporate the yolks one by one, using a spatula or wooden spoon. Then add the hot water and vanilla essence.
- Sift the flour and baking powder over the mixture and gently fold until combined.
- Pour the mixture into the pan and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
2. Cocoa layer:
- Follow the same steps as for the vanilla layer, but replace 2.5 tablespoons of flour with 1 tablespoon of cocoa. Bake in the same manner for 15-20 minutes.
3. Nut layer:
- Repeat the process, but in this case, add 1 tablespoon of ground nuts to the flour mixture. Bake as with the other layers.
Step 2: Preparing the Syrup
- In a small pot, combine the water and sugar. Heat over medium heat and let it boil until the sugar completely dissolves and the syrup becomes slightly thick. Finally, add the rum essence and let it cool.
Step 3: Vanilla Cream
1. In a saucepan, bring 300 ml of the 600 ml of milk to a boil, adding the seeds from the vanilla pod and the pod itself.
2. In another bowl, combine the remaining 300 ml of milk with the yolks, sugar, and flour. Mix well to avoid lumps.
3. When the milk on the stove starts to boil, pour it into the egg mixture and stir continuously, then return everything to the heat.
4. Cook on low heat, stirring constantly until the cream thickens. Once ready, let it cool slightly, then fold in the whipped egg whites with the remaining sugar.
Step 4: Assembling the Cake
1. Start with the vanilla layer. Generously soak it with the prepared syrup.
2. Spread 1/3 of the vanilla cream over the vanilla layer, then sprinkle 1/3 of the ground nuts.
3. Place the cocoa layer on top, soak it, spread 1/3 of the cream, and sprinkle more nuts.
4. Continue with the nut layer, soak it, spread the remaining cream, and sprinkle ground nuts over the entire surface.
5. Don’t forget to coat the sides of the cake with ground nuts for a rustic and delicious look. You can decorate with raisins and whole nuts for an added touch of elegance.
