Breaded cauliflower
To prepare a delicious battered cauliflower, the first step is to take care of the cauliflower. So, we break the cauliflower into small florets, ensuring they are of uniform size for even cooking. After we have obtained the florets, we wash them well under a stream of cold water, thus removing any impurities. Once cleaned, we put water in a large pot, add a teaspoon of salt, and bring it to a boil. When the water starts to boil, we add the cauliflower florets and let them boil for 5 minutes. This blanching process helps retain the color and crunchy texture of the cauliflower.
After boiling, we remove the florets from the water and let them drain in a colander to eliminate excess water. Meanwhile, we prepare the batter. In a large bowl, we crack a few eggs, add a pinch of salt to enhance the flavor, and mix well. Using a fork or a whisk, we beat the eggs until they become homogeneous. We add a few crushed garlic cloves, which will give a savory flavor to the dish. Fresh garlic is essential for giving the cauliflower a special aroma.
Once the garlic is well incorporated into the egg mixture, we gradually add the flour, stirring constantly to avoid lumps. The final consistency should be similar to that of pancake batter, but slightly thicker, to adhere well to the cauliflower florets. Now that we have a thick and aromatic batter, it is time to fry the cauliflower.
We heat oil in a deep pan, enough to cover the bottom. When the oil is hot enough, we take the cauliflower florets, dip them in the prepared batter, ensuring they are evenly coated. Then, we carefully place them in the pan, being careful not to overcrowd them. We fry the florets on all sides until they become golden and crispy, which will take about 3-4 minutes on each side.
Once the cauliflower is ready, we remove it onto a paper towel to absorb the excess oil. Now, the battered cauliflower is perfect to be served as an appetizer or side dish. We can accompany it with a garlic yogurt sauce or a fresh salad for a pleasant contrast.
