During Lent, we shouldn't give up on delicious treats! I propose a traditional recipe for tender and delicious Lenten croissants, which will bring a touch of nostalgia from grandmother's time. These croissants are perfect as a quick dessert, ideal to be enjoyed alongside a cup of tea or coffee.

Ingredients:
- 500 g flour
- 200 ml oil
- 100 ml sparkling water
- 1 packet of dry yeast (or 25 g fresh yeast)
- 100 g sugar
- A pinch of salt
- 200 g plum jam or ground walnuts
- Powdered sugar for decoration

Step-by-step preparation:

1. Preparing the dough: In a large bowl, sift the flour to aerate it and avoid lumps. Make a well in the center of the flour and add the dry yeast, sugar, and salt. If using fresh yeast, dissolve it in warm sparkling water before adding it. Gradually add the oil and sparkling water, mixing with a spatula or your hands until you obtain a homogeneous dough.

2. Kneading: Knead the dough for 5-7 minutes until it becomes elastic and no longer sticks to your hands. If the dough is too sticky, add a little more flour. This step is essential for getting tender and fluffy croissants.

3. Resting the dough: Cover the bowl with a clean towel and let the dough rest for 30 minutes in a warm place to allow the yeast to act.

4. Shaping the croissants: After the dough has risen, divide it into 4-5 equal balls. Take one ball and roll it out into a thin disc, about 3 mm thick. Cut the discs into triangles (about 8-10 triangles per disc). Place a teaspoon of plum jam or ground walnuts at the base of each triangle and roll the croissants from the base to the tip.

5. Baking: Place the croissants on a baking tray lined with parchment paper, leaving a little space between them. Bake in a preheated oven at 180°C for 25-30 minutes until golden. Try not to leave them too long, as we want them to remain tender.

6. Cooling and serving: After baking, let the croissants cool on a wire rack. Sprinkle powdered sugar on top for a festive look. These Lenten croissants can be served warm or at room temperature.

- You can vary the filling according to your preferences, using apricot jam, orange marmalade, or vegan chocolate.
