Ingredients:
- 250 g Petit Beurre biscuits (one large pack)
- 2 ripe bananas
- 6 heaping tablespoons of chocolate truffle cream (see recipe below)
*For the chocolate truffle cream:*
- 100 g dark chocolate
- 200 g milk chocolate (2 bars)
- 100 g butter
- 150 ml liquid cream
- 3 tablespoons powdered sugar
- 2 tablespoons water
Preparing the chocolate truffle cream:
1. Start by preparing the truffle cream, as it needs to cool before use. Fill a saucepan with water and place it on the stove.
2. Take another saucepan and add the 2 tablespoons of water along with all 3 types of chocolate (dark and milk), chopped into small pieces. Place this saucepan in the first one, creating a double boiler.
3. Gently stir the chocolate until it completely melts. Once melted, remove the saucepan from the heat and let it cool for a few minutes.
4. Place the saucepan back on the heat, add the liquid cream, and mix well. Finally, incorporate the cubed butter and powdered sugar. Continue to stir until everything is perfectly combined. Turn off the heat and let the cream cool to room temperature.
Preparing the cookies:
5. In a blender, add the Petit Beurre biscuits and blend until you get a fine powder.
6. In a bowl, place the 2 bananas and mash them with a fork until they become a creamy paste.
7. Add the biscuit powder and 6 tablespoons of the cooled chocolate truffle cream, mixing well until you achieve a homogeneous dough. If the dough is too wet, you can add a little biscuit flour to thicken it.
8. Add half a vial of vanilla essence and a teaspoon of rum essence, mixing again to incorporate the flavors.
9. On a work surface sprinkled with biscuit flour, roll out the dough with a rolling pin until it reaches a thickness of about 1 cm.
10. Use desired shapes to cut out the cookies and place them on a baking tray lined with parchment paper. Sprinkle a little biscuit flour on top for a more attractive appearance.
11. Place the tray in the refrigerator for about 30 minutes to allow the cookies to firm up a bit.
