Baking time: 0 minutes
Chilling time: 4 hours
Number of servings: 8

Ingredients

For the biscuit base:
- 125 g tea biscuits
- 50 g butter (ideally 82% fat)

For the dark chocolate mousse:
- 85 g dark chocolate (70% cocoa)
- 85 g butter (82% fat)
- 30 ml strong espresso coffee
- 2 eggs (preferably fresh)
- 85 g sugar + 1/2 tablespoon sugar
- 15 ml rum
- 1 teaspoon water
- A pinch of salt

For the white chocolate mousse:
- 85 g white chocolate
- 85 g butter (82% fat)
- 30 ml coconut milk
- 2 eggs
- 85 g sugar + 1/2 tablespoon sugar
- 15 ml vanilla extract
- A pinch of salt

Preparation

Step 1: Preparing the biscuit base
To achieve a crispy and flavorful base, start by grinding the biscuits in a food processor or with a rolling pin until they become a fine powder. Add the melted butter (make sure it is at room temperature) and mix well until the mixture becomes homogeneous. If you want an extra texture, you can add chopped nuts or hazelnuts.

Spread the obtained mixture in a springform cake pan (23 cm) and press well to form an even layer. Place the pan in the refrigerator to harden while you prepare the mousse.

Step 2: Preparing the dark chocolate mousse
For the dark chocolate mousse, place the broken chocolate pieces, diced butter, and coffee in a bowl over a double boiler. Stir constantly until all the ingredients are completely melted and homogeneous. This step is essential to achieve a smooth texture.

In another bowl, add the egg yolks, 85 g sugar, rum, and water. Place this bowl over a double boiler and mix with a whisk or a quality hand mixer until the sugar is completely dissolved and the mixture becomes fluffy and slightly lighter in color (about 10 minutes). Once done, transfer the bowl to cold water and continue mixing until it cools down.

Add the cooled chocolate mixture to the egg yolk cream and homogenize with a whisk, being careful not to form lumps. A drop of salt will enhance the flavors.

Whip the egg whites with the remaining sugar until stiff peaks form. Now, take a third of the egg white foam and gently fold it into the chocolate mixture using a spatula, with up-and-down motions. Continue with the rest of the egg whites, mixing gently to retain the air in the mixture.

Step 3: Assembling the cake
Remove the base from the refrigerator and, using a strip of cardboard or a knife, divide the cake into two equal halves. Pour the dark chocolate mousse into the first half and let it chill in the refrigerator for at least 30 minutes.

Step 4: Preparing the white chocolate mousse
Repeat the process for the white chocolate mousse. In a bowl over a double boiler, melt the white chocolate and butter, stirring to obtain a homogeneous mixture. Then, in another bowl, beat the egg yolks with the sugar and vanilla extract over a double boiler, then cool. Mix the melted chocolate with the egg cream, and then fold in the whipped egg whites just like in the dark chocolate mousse.

Remove the base from the refrigerator and, very carefully, pour the white chocolate mousse over the dark chocolate mousse, ensuring they do not mix. Place the cake in the refrigerator for at least 4 hours or overnight for it to set perfectly.

Step 5: Decorating the cake
Once the cake is fully set, it’s time to decorate it. You can use crushed biscuits or chocolate shaped like sea creatures for a special visual effect. Each slice will bring an explosion of flavors that will transport you to a sweet vacation.
