Preparation time: 1 hour
Baking time: 30 minutes
Total time: 1 hour and 30 minutes
Servings: 12-14

Ingredients

For the base:
- 8 eggs
- 8 tablespoons of sugar
- 8 tablespoons of flour

For Cream 1:
- 250 ml heavy cream (36% fat)
- 100 g dark chocolate (75% cocoa)

For Cream 2:
- 250 ml heavy cream (36% fat)
- 150 g walnuts (1 cup)
- 1 packet of vanilla sugar

For decoration:
- 30 g white chocolate (colored with yellow dye)
- 30 g dark chocolate

For the fondant (to cover the cake):
- 450 g powdered sugar (or granulated sugar ground)
- 30 ml water
- 10 g gelatin (granules, from Dr. Oetker)
- 50 g honey
- Blue food coloring

For the milk powder paste (for details):
- 3 teaspoons honey (preferably lime honey)
- 24 teaspoons milk powder
- Pink and green food colorings

Preparing the Base

1. Separating the eggs: Start by carefully separating the egg whites from the yolks. It is important that the bowls are clean, without any grease, so that the egg whites whip well.

2. Whip the yolks: In a large bowl, add the yolks and the 8 tablespoons of sugar. Use a mixer to achieve a creamy and light-colored mixture.

3. Whip the egg whites: In another bowl, whip the egg whites with a pinch of salt until they form stiff peaks. This step is essential for getting a fluffy base, so don’t skip it!

4. Combining the mixtures: Gently fold the whipped egg whites into the yolk mixture using a wooden spatula. This helps to maintain the air in the egg whites, which is essential for an airy base.

5. Add the flour: Sift the 8 tablespoons of flour over the obtained mixture and gently mix to avoid destroying the accumulated air.

6. Baking: Grease a baking tray (25.5 x 38 cm) with butter and sprinkle a little flour. Pour half of the mixture and bake at 180°C for about 30 minutes. Use a toothpick to check if it’s baked (if it comes out clean, the base is ready!).

7. Soak the base: After it has cooled, soak it with fruit compote or a simple syrup (water, sugar, optional essence).

Preparing the Cream

1. Cream 1: Melt the dark chocolate in the heavy cream brought close to a boil (without letting it boil). Mix well, then let it cool covered with plastic wrap. After an hour in the fridge, whip the cream until it becomes smooth and firm.

2. Cream 2: Whip the 250 ml of heavy cream with the vanilla sugar until it thickens. Then, add the chopped walnuts and gently mix.

Covering the Cake

1. Preparing the fondant: In a bowl, soak the gelatin in water to swell. Once it has swelled, dissolve it in a water bath. As soon as it has melted, add the honey and blue dye. Mix until smooth and then gradually add the powdered sugar, working the dough until it becomes elastic. If it is too sticky, add more sugar; if it is too hard, add a little water. Place the dough in the fridge for 30 minutes.

2. Forming the details: Use a portion of the milk powder paste to create a tie, a collar, and a pocket. The details can be made with a knife and specific molds.

3. Decorating the cake: Roll out the fondant over the cake, ensuring it is evenly distributed. Use oil or cornstarch to prevent sticking. You can create details with melted chocolate, adding an extra touch of elegance.

Finalizing and Serving

Let the cake chill overnight to set. The next day, add the decorative details, such as the tie and collar, that you prepared earlier. Serve the cake with a smile and enjoy the reaction of your loved ones!

Practical Tips

- Experiment with different flavors and colors of dyes to customize the cake according to your preferences.
- Ensure all ingredients are at room temperature to facilitate creating a smooth cream.
- If you want to add an extra flavor, you can use vanilla or almond extracts in the creams.
