Little Kurtos
To prepare a delicious kurtos kalacs recipe, start by placing the flour in a deep bowl, making sure to create a hole in the middle. This 'nest' will be where we activate the yeast. In a small bowl, heat a little milk, no more than lukewarm, and add the yeast. Stir gently until completely dissolved. Then add the salt and vanilla sugar, mixing well to obtain a homogeneous composition. Pour this mixture into the hole in the flour and mix with a little flour until you get a dough. Cover the bowl with a clean towel and let it rise in a warm place for about 15-20 minutes, until the volume doubles.
Once the dough has risen, add the egg yolks, sugar, grated lemon zest, and a little more lukewarm milk, so that you get a soft dough, but not too stiff. Start kneading the dough vigorously, and before finishing, add the two handfuls of oil and continue kneading until the dough becomes elastic and the first bubble appears. After you are done, cover it again and let it rise for about 30 minutes.
After the dough has risen, turn it out onto a floured work surface. Gently gather it, but don't flatten it too much. Cut it into strips about one and a half fingers wide. These strips will be rolled onto the corn cob, which you have previously greased with oil. Let them sit like this for another 15 minutes to rest.
After they have rested, brush the rolled dough with oil and roll it in ground walnuts mixed with sugar. Be careful to leave one part uncoated, as it might burn when the kurtos kalacs is placed in the oven. If you prefer, you can use milk with sugar for brushing. Another option is to roll them in coconut mixed with sugar for an exotic taste.
Place them in the greased tray and put them in the preheated oven at a medium temperature. When they are baked and have a golden color, take them out and carefully remove the corn cobs. Place them on a clean towel, cover them with another towel and a piece of plastic wrap, so they stay warm and fluffy. Let them cool completely, but be careful, as their enticing aroma may attract eager children or guests wanting to try this delicacy. Enjoy them with a fragrant tea or a glass of milk!
Ingredients: We need the following for the dough: 1 kg of flour (I use 1/2 white flour and 1/2 wholemeal flour), butter the size of a walnut, a pinch of salt, zest from one lemon, 4 egg yolks, 2 vanilla sugars, 2 handfuls of sugar, 1 piece of fresh yeast, milk, 2 handfuls of oil.
