Chestnut cream truffles
Delicious Chestnut Cream Truffles Recipe
Preparation time: 30 minutes
Cooling time: 1 hour
Total time: 1 hour and 30 minutes
Number of servings: approximately 20 truffles
Necessary ingredients:
- 200 g plain biscuits (digestive or vanilla biscuits)
- 100 g walnut kernels
- 200 g chestnut cream (can be found at specialty stores or in international product sections)
- 100 g dark chocolate (minimum 70% cocoa)
- 2 tablespoons of butter
- A pinch of salt
- Cocoa powder or shredded coconut for rolling (optional)
Step 1: Preparing the biscuits
Start by crushing the biscuits. You can use a rolling pin to crush them finely, but I recommend processing them in a blender to achieve a fine powder. Make sure the biscuits are well crushed, as this base will provide consistency to your truffles.
Step 2: Toasting the walnut kernels
In a dry, well-heated pan, add the walnut kernels. Toast them over medium heat for 2-3 minutes, stirring constantly, until they turn golden and start to emit a pleasant aroma. Be careful not to burn them, as the bitter taste will affect the truffles. After toasting, let them cool and then chop them into small pieces.
Step 3: Creating the mixture
In a large bowl, combine the crushed biscuits, chopped walnuts, chestnut cream, and a pinch of salt. Mix the ingredients well, ensuring they are evenly distributed.
Step 4: Melting the chocolate
In a double boiler, melt the dark chocolate along with the butter, stirring continuously to achieve a smooth mixture. Another option is to use the microwave, but make sure the chocolate doesn't burn. Once melted, let it cool slightly, then add it to the biscuit and chestnut mixture.
Step 5: Forming the truffles
Once the mixture has cooled slightly, take a small amount of the mixture and form balls about 2-3 cm in diameter. You can use damp hands to prevent sticking, but make sure to keep your hands clean and dry throughout the process.
Step 6: Rolling the truffles
After you have formed all the balls, you can roll them in cocoa powder or shredded coconut to give them an attractive appearance and enhance the flavors. This is an optional step but highly recommended for an extra touch of flavor.
Step 7: Cooling
Place the truffles on a plate and refrigerate them for at least an hour, so they firm up and the flavors combine. These chestnut cream truffles are perfect for serving as a quick dessert or as a sweet gift for loved ones.
Serving suggestion: Serve the truffles on an elegant platter, alongside a cup of aromatic tea or coffee. You can also add a few fresh mint leaves for a color and flavor contrast.
Possible variations: You can experiment with different types of nuts, such as hazelnuts or almonds, or you can add a splash of rum or vanilla essence to the mixture for an even more complex taste. You can also use milk chocolate for a sweeter flavor, or replace the chestnut cream with chocolate cream.
