To prepare a delicious chicken feet jelly, we need to follow a few simple but essential steps. We start by carefully cleaning and washing the chicken feet, ensuring they are well sanitized. Then, we place them in a large pot together with 3 liters of cold water. It is important to use cold water to allow the flavors to develop gradually during boiling. We add a heaping tablespoon of salt, essential for giving flavor to the dish, and let it simmer on low heat.

To intensify the aroma, we also add two heads of garlic, which we peel off the first layer of skin but leave whole. This will allow the garlic flavor to infuse into the broth without breaking down completely. We also add a tablespoon of peppercorns, which will add a hint of spiciness and complement the dish's flavor. We let everything simmer slowly, stirring occasionally, until the liquid reduces to half of its initial amount.

Along the way, it is important to check the taste and, if necessary, add salt to preference. However, we must be careful, as excessive salt can compromise the jelling process of the jelly. In the meantime, we prepare the vegetables from the Mexican mix, which we boil separately until tender, and we don't forget to boil three chicken livers, which will add a rich texture and delicious flavor.

After the feet are boiled, we remove them from the pot and strain the liquid to obtain a clear broth full of flavors. In plastic bowls, we place a few tablespoons of the boiled vegetables, followed by a piece of liver, and pour a little broth over them. These layers will form the base of our jelly.

We let the bowls cool for a few hours until the jelly starts to set. Once a firm film forms on the surface, we carefully place a few chicken feet on top and complete with the remaining liquid. The entire combination will give rise to an appetizing and flavorful jelly.

After the jelly has completely set, we carefully turn it out onto a flat plate and serve it with a splash of lemon juice, which will add an extra touch of freshness. This recipe is not only tasty but also a true visual delight. Enjoy your meal!

 Ingredients: 12 pieces of chicken legs, 1 piece of chicken breast bone and skin (the meat was used for Smile schnitzels), 2 heads of garlic, 1 tablespoon of pepper, salt to taste, Mexican vegetable mix, 3 chicken livers.
