Preparation:
1. Picking and preparing the gooseberries: Start by picking gooseberries, preferring the fleshy and slightly unripe ones. This will ensure a pleasant acidity in the jam. Involve the kids in this process, turning it into a fun activity!
2. Washing and cleaning the gooseberries: After picking the gooseberries, wash them well under running water. Use a small knife to remove the pistils and stems. This step is crucial for obtaining a clean and tasty jam.
3. Grinding the gooseberries: Attach a disc with 8 mm holes to the meat grinder. Pass the washed gooseberries through the grinder twice, obtaining a homogeneous paste. If you don't have a meat grinder, you can use a blender, but make sure not to turn it into a complete puree.
4. Boiling the jam: Pour the obtained paste into a suitably sized pot. Add the washed raisins and mix well. Boil over medium heat for about 10 minutes, stirring constantly with a wooden spoon or a heat-resistant plastic spoon. This will prevent the jam from sticking to the bottom of the pot.
5. Sweetening and flavoring: After boiling the gooseberries, add the lemon or orange juice and honey. Mix well so that the honey dissolves completely in the hot mixture. Honey not only sweetens the jam but also gives it a distinct taste, particularly Muscat.
6. Preserving: Once the jam is ready, sterilize the jars. Fill them with the hot jam, leaving about 1 cm of space at the top. Close the jars with lids and let them cool completely.
