- 100 ml sunflower oil

- 1 bunch of fresh parsley
- 2 bay leaves
- 1 teaspoon of peppercorns

Preparation:

1. Start by cleaning the chicken offal, ensuring you remove any membranes or excess fat. Wash them well under cold running water and place them in a bowl.

2. Place the offal in a large pot, cover them with water, and add a pinch of salt. Set the pot over medium heat and bring it to a boil. This is the time to skim the soup, meaning you should remove the foam that forms on the surface with a spatula or spoon. This step is essential to achieve a clear and tasty stew.

3. After skimming, add the bay leaves, peppercorns, and let it simmer on low heat for about 30 minutes. This process will help soften the offal and intensify the flavors.
