Ingredients for the dough:
- 500 g flour
- 25 g fresh yeast (or 7 g dry yeast)
- 1 teaspoon sugar
- 1 tablespoon flour
- 250 ml lukewarm milk
- 1 egg
- 70 g melted butter
- 1/2 teaspoon salt

Ingredients for the filling:
- 500 ml milk
- 100 g sugar
- 1 packet of pudding (vanilla or chocolate flavor)
- 1 teaspoon vanilla extract

Ingredients for brushing:
- 1 egg yolk
- 1 tablespoon milk

Preparation:

1. Start by preparing the yeast mixture. In a small bowl, combine the fresh yeast with 1 teaspoon of sugar and 1 tablespoon of flour. Pour the lukewarm milk over the mixture and let it sit for 10-15 minutes until it becomes frothy. This step will activate the yeast, ensuring that the dough rises beautifully.

2. Meanwhile, in a large bowl, sift the flour and add 1/2 teaspoon of salt. Make a well in the center and add the activated yeast mixture, egg, and melted butter. Combine the ingredients until you obtain a smooth dough.

3. Knead the dough for about 10 minutes until it becomes elastic and no longer sticks to your hands. Cover it with a clean towel and let it rise in a warm place, away from drafts, for 30-40 minutes, or until it doubles in size.

4. While the dough is rising, prepare the filling. In a saucepan, bring the milk to a boil. In a separate bowl, mix the pudding with the sugar and a little cold milk to form a paste. When the milk in the saucepan starts to boil, add the pudding mixture and stir continuously for 2-3 minutes until it thickens. Remove from heat and add the vanilla extract. Let it cool.

5. After the dough has risen, roll it out on a floured surface to form a rectangle about 1 cm thick. Spread the pudding filling evenly over the entire surface.

6. Roll the dough lengthwise to form a cylinder. Cut the cylinder into pieces about 4-5 cm long and place them in a baking tray lined with parchment paper, leaving a little space between them to allow for rising.

7. In a small bowl, mix the egg yolk with 1 tablespoon of milk and brush this mixture over each twisted roll. This step will ensure a golden and appetizing crust.

8. Let the twisted rolls rise for another 15-20 minutes. Meanwhile, preheat the oven to 180°C.
