To create a delicious coconut cake, start by preparing all the necessary ingredients to make your cooking process easier. You will need 4 fresh eggs, 200 grams of sugar, 200 grams of grated coconut, a teaspoon of vanilla essence, and a pinch of salt. Make sure you also have a baking tray, which you will line with parchment paper to prevent the cake from sticking.

Start by beating the eggs in a large bowl using a whisk or mixer. It is important to beat them well until they become fluffy and triple in volume. Then, gradually add the sugar while continuing to mix. This step is essential because the sugar will dissolve better and contribute to the airy texture of the mixture. After obtaining a smooth and shiny cream, add the vanilla essence and a pinch of salt, which will enhance the flavors.

The next step is to incorporate the grated coconut. Use a spatula or a wooden spoon to mix the ingredients. It is important to mix gently, from top to bottom, to avoid losing air from the mixture. The coconut will add an interesting texture and a subtle flavor to your cake.

Once you have a uniform mixture, take a spoonful of the mixture and place it on the prepared tray, leaving enough space between each portion, as they will rise during baking. Preheat the oven to a low temperature, around 150 degrees Celsius. Bake the cakes for 10 minutes, then open the oven door and leave it ajar, continuing to bake for 1 hour. Check if they are ready by gently pressing with your finger; if they are soft, leave them in the oven for a few more minutes. When they are perfectly baked, take them out and let them cool on a wire rack.
