- 300 g of cottage cheese (ideally well-drained)
- 200 ml of liquid cream
- 1 vanilla pod (or 1 teaspoon of vanilla extract)
- 1 tablespoon of vanilla sugar
- A few tablespoons of powdered sugar (to taste)
- 2 tablespoons of cocoa
- 10 g of gelatin

*For the fruit glaze:*
- 1 jar of fruit compote of your choice (homemade pear compote is recommended)
- 200 ml of compote syrup
- 2 heaping tablespoons of cornstarch

Step by step:

1. Preparing the white base:
Start by separating the eggs. Place the egg whites in a large bowl and the yolks in another. Beat the yolks with the sugar until creamy and they change color. An important secret is to use eggs at room temperature, so the mixture will be more aerated.

In another bowl, beat the egg whites with a pinch of salt until you get a firm foam, which will help aerate the base. Add the beaten egg whites over the yolks and mix gently, using the back of a spoon, from bottom to top, to keep the air in the mixture.

Sift the flour together with the baking powder and gradually add them, mixing gently. Finally, you can add the chocolate chips for an extra touch of flavor.

Pour the mixture into a greased and floured or parchment-lined baking pan. Bake in a preheated oven at 180°C for about 30 minutes or until it passes the toothpick test. Let it cool on a rack.

2. Preparing the black base:
In a small pot, melt the chocolate together with the butter over low heat. It is essential to stir constantly to avoid burning the chocolate. If the glaze becomes too thick, add a splash of water to achieve a more fluid consistency.

In a large bowl, mix the cottage cheese with the vanilla sugar, the seeds from the vanilla pod, and the powdered sugar. Add the whipped cream and melted gelatin, mixing gently until you get a smooth cream.

From this cream, take 3-4 tablespoons and mix them with cocoa and possibly powdered sugar if you like it sweeter. This will be the chocolate cream that will add a fabulous contrast.

4. Assembling the cake:
Start by spreading the white cream cheese over the base, leaving small holes where you will add the cocoa cream. Then, place the white base over the cream cheese and refrigerate the cake for 30 minutes.

5. Preparing the fruit glaze:
Cut the fruits from the compote, if necessary. In a pot, put 150 ml of the compote syrup over low heat. Mix the remaining syrup with the cornstarch and pour it into the pot. Continue to stir until a thin cream forms. If it thickens too much, add a little syrup (or water) to thin it out.

Place the fruits over the cake and pour the syrup glaze over, covering the fruits well. Refrigerate the cake for 2-3 hours to set.

6. Serving:
After the cake has completely cooled, cut it into servings and serve it with a spoonful of whipped cream or chocolate sauce for an extra touch of flavor. This cheesecake and fruit cake will surely bring smiles to the faces of your loved ones.
