Total preparation time: 3 hours (including cooling time)
Preparation time: 1 hour
Baking time: 30-45 minutes
Number of servings: 12
Ingredients:
For the layers:
- 1 kg flour
- 100 g sugar
- 1 packet of ammonium (or 1 packet of baking powder)
- A pinch of salt
- Grated zest of 1 orange
- 3 eggs
- 300 g lard (or butter at room temperature)
- 100 ml milk
- 3 tablespoons poppy seeds
- 3 tablespoons cocoa
- 3 tablespoons ground walnuts
For the cream:
- 500 ml milk
- 4 tablespoons semolina
- 150 g butter
- Vanilla essence
For decoration:
- 1 chocolate bar (about 200 g, your choice: dark, milk, or white)
- 50 g butter
- 100 ml cream
Preparation:
1. Preparing the layers: In a large bowl, add the flour, sugar, ammonium, salt, and orange zest. Mix the dry ingredients well, then divide the mixture into three separate bowls. This will allow you to create three types of layers: with poppy seeds, with walnuts, and with cocoa.
2. Poppy seed layers: In the first bowl, add 3 tablespoons of poppy seeds, 1 egg, 100 g of lard, and start kneading. Gradually add the milk until you obtain a homogeneous dough. Wrap the dough in plastic wrap and let it cool in the refrigerator for 30 minutes. It is important to follow this step to achieve tender layers.
3. Walnut layers: Proceed similarly with the second bowl, adding ground walnuts, 1 egg, 100 g of lard, and the necessary milk. Knead until you obtain a homogeneous dough, wrapping it in plastic and letting it cool for 30 minutes.
4. Cocoa layers: Repeat the process with the third bowl, adding cocoa, 1 egg, 100 g of lard, and the necessary milk. Knead until you obtain a homogeneous dough, wrap it, and chill for 30 minutes.
5. Baking the layers: Once all three types of dough have chilled, start rolling them out on a floured surface. Roll each piece of dough to obtain rectangular layers. Transfer each layer onto the back of a greased baking tray, trim the excess dough, and bake in a preheated oven at 180°C for 10-15 minutes, or until the layers become lightly golden. Repeat the process until all layers are finished.
6. Preparing the cream: In a saucepan, add the sugar and milk, then heat over medium heat. When the mixture comes to a boil, add the semolina mixed with a little milk, stirring continuously to avoid lumps. Cook until the cream thickens, then remove the saucepan from the heat and add the vanilla essence and diced butter. Stir until the butter completely melts. Cover the cream with plastic wrap and let it cool.
7. Assembling the cake: Place the first poppy seed layer on a platter, add a generous layer of cream, then place the cocoa layer followed by another layer of cream. Finish with the walnut layer. Place a weight on top (for example, a tray or bowl) to help compact the layers and let the cake chill for a few hours (ideally overnight) to set.
8. Preparing the decoration: In a small bowl, add the chocolate broken into pieces, butter, and cream. Heat over low heat, stirring continuously until the chocolate melts and the mixture becomes smooth. Pour the melted chocolate over the cake and let it cool for another 30 minutes.
9. Serving and decorating: Once the cake has cooled well, decorate it as you prefer. You can use chocolate shavings, ground walnuts, or even fresh fruits for a contrast of textures and colors. Cut the cake into servings and enjoy every bite!
Useful tips:
- Use quality lard to achieve tender and flavorful layers. If you prefer, you can replace the lard with butter, but make sure to adjust the amount of milk to avoid a dough that is too soft.
- Experiment with various types of nuts or seeds in the fillings, such as hazelnuts or almonds for a different taste.
- The cake can be served alongside a cup of tea or coffee, but it also pairs wonderfully with sweet wine or chocolate liqueur.
Frequently asked questions:
- Can I use whole wheat flour? Yes, but keep in mind that the texture of the layers will be different, denser.
- How can I make the cream more flavorful? You can add additional essences, such as rum or almond, to enhance the flavor.
- Can I store the cake in the freezer? Absolutely! It is an excellent dessert to be kept in the freezer. Make sure to wrap it well to prevent freezer burn.
Nutritional benefits:
This cake contains nutrient-rich ingredients, such as nuts, which are an excellent source of protein and healthy fats, and poppy seeds, which provide fiber and essential minerals. Additionally, moderate consumption of chocolate can bring health benefits due to the antioxidants it contains.
I hope you enjoy this wonderful dessert and share it with your loved ones! Every bite will bring you a touch of happiness and a smile to your face. Bon appétit!
