To prepare a delicious and refined ice cream from fresh or frozen fruits, start by carefully selecting the ingredients. Fresh fruits such as raspberries, strawberries, peaches, or apricots should be well-ripened and flavorful. If you opt for frozen fruits, make sure they have no added sugar, as we want a balanced taste.

The first step is to prepare the fruits. If you are using fresh fruits, clean them and cut them into smaller pieces. If they are frozen, let them partially thaw so that they are easy to process. Then, place the fruits in a large bowl; ideally, you should use a hand blender or a food processor. Blend them until you get a smooth paste. If the fruits are too tart, add sugar, but be careful not to overdo it, as we want the ice cream to be balanced in sweetness.

Once you have obtained the fruit puree, add the cream and vanilla essence. Mix well until everything is homogeneous. Now comes the stage where you put the mixture into the ice cream machine. Let it churn for about 25 minutes until it reaches a creamy and airy consistency. If you don’t have an ice cream machine, don’t worry! You can use a regular bowl, but make sure to stir the ice cream every 30 minutes to avoid ice crystals forming until it becomes firm.

After the ice cream is ready, prepare the paper cups. Fill each cup with the prepared ice cream, then insert a stick in the middle. Place the cups in the freezer to solidify completely. After a few hours, when the ice cream has set, take the cups out and carefully remove the ice cream from them.

For a touch of refinement, melt dark or white chocolate and coat the ice cream in the melted chocolate, letting it cool to create a delicious crust. You can also add coarsely chopped nuts for extra texture and intense flavor.

This ice cream recipe is versatile, and you can experiment with various combinations of fruits. You can try raspberries, strawberries, peaches, or even a mixture of fruits to create a refreshing dessert that will surely impress everyone. Enjoy the ice cream on a hot day with your loved ones!

 Ingredients: 500 ml (2 cups) heavy cream 500 g (16 oz) frozen fruit (I used fresh mango... generally juicy, frozen fruits are used) vanilla essence to taste sugar to taste (I added about 4 tablespoons)
