Meat roll
To prepare a delicious and juicy roll, we start with a piece of veal or pork, which we will unfold with a sharp knife, being careful to maintain an even thickness. After obtaining a thin sheet of meat, we will gently pound it to tenderize it and make it easier to roll. It is important to cut this sheet into rectangular shapes so that we can fill and roll the meat easily.
The leftover meat after cutting is not thrown away. It will be finely chopped in a blender, where we will combine it with an egg, a slice of bread soaked in milk, salt, and our favorite spices. We also add a clove of garlic, previously crushed, to enhance the flavors. Optionally, we can add chopped greens, such as parsley or dill, for an extra touch of freshness.
Meanwhile, we prepare the vegetable filling. We boil the beans until soft, and cut the carrot into sticks. These vegetables will add a pleasant contrast of textures and flavors to our roll.
Once we have all the ingredients ready, we spread the sheet of meat with mustard seeds, which will provide a special taste. Then, we place a layer of the minced meat mixture, followed by the boiled vegetables, and in the middle, a piece of kabanos or Cluj sausages, which will add a savory flavor to the roll.
Now, carefully, we begin to roll the sheet of meat, making sure that the filling stays well enclosed. After forming the roll, we tie it with kitchen twine, and for added safety, we wrap it in aluminum foil. This will help keep the juiciness during baking.
The roll will then be placed in a baking dish where we add water, filling it halfway up the roll. We will place it in a preheated oven, where it will bake for about 1 hour to 1 hour and a half. It is important to check the water level in the dish from time to time to ensure that the roll does not dry out.
After it is baked, we let the roll cool in the foil. Once cooled, we wrap it in a 400g sheet of puff pastry, which we spread with a spoonful of sour cream to give it a creamy taste. Then, we put it back in the oven until the dough turns beautifully golden and crispy.
If we want to experiment, we can prepare a version with turkey meat, following the same steps but changing the filling to melted cheese, pickled cucumbers, boiled carrots, or pickled peppers. These alternatives will provide a variety of flavors and textures, turning every meal into a true feast of tastes.
