Figures from the Omelette with Cheeses

Grease the 12x15 cm baking dish with butter and dust it with flour, then chill it to set the butter. An excellent alternative is to use parchment paper, which will make it easier to release the omelette after baking. Personally, I opted for this type of lining and also covered the sides of the dish to achieve a more uniform result. The pictures I took during the process will give you a clear idea of the steps I follow.
In a large bowl, beat the egg yolks well with a pinch of salt and pepper, mixing them vigorously until the mixture becomes uniform and changes color, turning a lighter shade. This is the perfect base for creating a delicious omelette. Once the yolks are prepared, add the bread soaked in milk, grated cheeses, and mix everything with a spatula to achieve a homogeneous composition. This combination of ingredients will give the omelette a soft texture and savory flavor.
Once the mixture is ready, pour it into the prepared dish and, if desired, keep it cool, especially if you plan to combine it with another type of omelette, as I did. I created a geometric presentation, combining the cheese omelette with a spinach omelette, resulting in something not only delicious but also visually appealing.
The omelette is baked in a water bath, the ideal method to ensure even cooking and a fluffy texture. In a bain-marie pot, add warm water, being careful not to exceed the level of the omelette in the dish. Place the dish in the preheated oven, allowing it to bake for 25-35 minutes at moderate heat, until the omelette is fully cooked and firm. Once ready, remove it from the oven and let it cool to room temperature.
After it has cooled, cut the omelette into cubes or your desired shapes using cookie or biscuit cutters for a special appearance. Arrange the cubes on a platter, letting your imagination guide you. For an extra flavor boost, you can garnish the omelette with anchovy fillets, capers, or other favorite ingredients, bringing a touch of creativity to your table. This recipe will not only impress with its taste but also with its attractive appearance.
