Chicken on the bone
To prepare an exceptional culinary delight, start by preparing the pork knuckle. The first step is to cut the skin with fat off the knuckle, making sure to remove all impurities. After obtaining pieces of skin, cut them into small cubes. These will be the base of your tasty dish. Next, the rest of the knuckle will be cut into strips, being careful to keep the meat with all its juices.
Now, heat a deep pan over medium heat and add the skin cubes. Pour 50 ml of water into the pan to help release the fat. Let them fry until the skin starts to render fat, becoming crispy and golden. It is important to stir constantly to prevent the skin from sticking and burning.
In the meantime, take the pieces of chicken and generously season them with freshly ground pepper and sweet paprika. These flavors will give the dish an intense and savory taste. Place the chicken over the fried skin, distributing the strips evenly to blend the flavors. Next, cover everything with the meaty strips of knuckle, which will add an extra note of flavor.
In a cup, combine honey, plum brandy, and vinegar, mixing the ingredients well to obtain a homogeneous mixture. This sauce will add a sweet and sour taste to the dish. Pour the mixture over the meat, ensuring that each piece is well covered. Also add white wine, which will help tenderize the meat, and meat broth to intensify the flavors.
Sprinkle fresh chopped parsley over the composition. This will not only add a note of freshness but will also beautifully color the dish. Cover the pan with a tight-fitting lid and transfer everything to the preheated oven at 180 degrees Celsius. Let it bake for about 1 hour and a half, turning occasionally to ensure that all the ingredients blend perfectly and the flavors develop harmoniously.
After the baking time has expired, take the dish out of the oven and let it rest for a few minutes before serving. You will notice how the meat becomes tender and juicy, and the sauce thickens, becoming delicious. This dish pairs wonderfully with a side of mashed potatoes or polenta, as well as with a fresh green salad. Enjoy this dish with family or friends, and success will be guaranteed!
