Meat Bread with Vegetable Garnish
To prepare a delicious oven-baked meat with a vegetable side dish, the beginning of the recipe involves an essential step: preparing the meat. Start by soaking the bread in cold water, ensuring it becomes soft enough so that it does not affect the final texture of the dish. While the bread absorbs the water, finely chop the dried onion, green onion, and parsley, making sure to save a few parsley leaves for decorating the dish at the end.
In a large bowl, combine the ground meat with the dried onion, the squeezed bread, mustard, whole eggs, and water, which you will add gradually, stirring continuously to obtain a homogeneous mixture. Season with salt, pepper, and paprika, adjusting the quantities according to personal preferences. Once the mixture is well homogenized, shape it into a ball or a roll, which you will place in a heat-resistant dish that you have previously greased with butter. Place the dish in the preheated oven and let it bake for about 30 minutes.
During this time, prepare the topping. Mix the green onion, parsley, breadcrumbs, grated cheese, lightly beaten egg white, and a little paprika. When the meat is nearly done, evenly sprinkle this mixture over it and return the dish to the oven for another 15-20 minutes, or until the meat is well cooked and develops a crispy, browned crust.
For the side dish, boil the sliced carrots and the cauliflower florets in lightly salted water for about 15 minutes, or until the vegetables are cooked. After boiling, drain the vegetables, but keep some of the water they were boiled in for later use. In a pan, melt a bit of butter and add the flour and curry, stirring constantly. Deglaze with milk and 100-150 ml of the reserved water, allowing the sauce to simmer gently, stirring continuously until it thickens.
Add the cooked vegetables, along with the onion and green parsley, and continue to stir gently, without boiling, until everything is heated through. Finally, adjust with salt and pepper, to taste. Serve the dish on a platter, placing the meat in the center, drizzled with a little sauce from the pan, and arrange the vegetable side around it, garnishing with finely chopped green parsley for an attractive appearance.
