Number of servings: 12 muffins

Coffee muffins are a perfect dessert for coffee lovers, ideal for an energizing breakfast or to be enjoyed as a dessert at any time of the day. With a fluffy texture and rich coffee flavor, these muffins are definitely an inspired choice. Here’s how to prepare them step by step.

Necessary ingredients:

- 300 g flour
- 200 g sugar
- 200 g butter (at room temperature)
- 4 eggs
- 1 packet of vanilla sugar
- 1 teaspoon ground coffee
- 2 packets of baking powder
- 3 tablespoons strong brewed coffee
- 2 tablespoons coffee liqueur (or coffee cream liqueur)
- Chocolate and coffee candies (optional)

For decoration:

- 100 g dark chocolate
- 2 tablespoons butter

Step 1: Preparing the mixture

Start by preheating the oven to 180°C. In a large bowl, mix the soft butter with the sugar and vanilla sugar until you get a fluffy and smooth cream. This is when your muffins will build their flavor base.

Add the ground coffee to the butter cream and mix well. Then, incorporate the eggs, one at a time, making sure to mix very well after each addition. This will help achieve an airy texture.

Step 2: Adding the dry ingredients

In another bowl, sift the flour together with the baking powder. Gradually add this mixture to the butter mixture, alternating with the 3 tablespoons of strong brewed coffee and the coffee liqueur. The mixture should become denser, but don’t worry, this is the desired texture.

If you choose to use chocolate and coffee candies, now is the time to add them. Use a spatula or a wooden spoon to gently fold in the ingredients.

Step 3: Preparing the muffin tray

Prepare the muffin tray by placing special baking papers in each cavity. Fill each cup halfway, keeping in mind that the muffins will rise significantly during baking.

Step 4: Baking the muffins

Place the tray in the preheated oven and bake for 30 minutes, or until the muffins are golden and pass the toothpick test. Let them cool in the tray for a few minutes, then transfer them to a cooling rack.

Step 5: Decorating the muffins

To give them a special look and taste, melt the dark chocolate together with the 2 tablespoons of butter in the microwave, being careful not to burn them. Mix well, then pour this delicious topping over the cooled muffins. Let them chill in the fridge for 20 minutes to harden the chocolate.

Serving suggestion: These coffee muffins are excellent alongside a steaming cup of coffee or a fragrant tea. You can decorate them with a few roasted coffee beans for an elegant look.

Possible variations: Instead of coffee liqueur, you can use condensed milk for a sweeter taste. You can also add chopped nuts or coconut flakes to the mixture for an interesting texture.

These coffee muffins are not only easy to make but also incredibly tasty, making them a quick dessert you’ll always want to repeat. Enjoy every bite and savor the rich flavors!
