This frozen cake recipe combines a fluffy base with a light cream and fresh fruits, creating a dessert that is not only delicious but also visually impressive. Moreover, it is a simple recipe, ideal for any occasion, from birthday parties to gatherings with friends.

Preparation time: 30 minutes
Baking time: 25 minutes
Freezing time: 8 hours (ideally overnight)
Total: 8 hours and 55 minutes
Servings: 12

Necessary ingredients:

For the base (3 layers):
- 9 eggs (3 eggs for each layer)
- 6 tablespoons water
- 15 tablespoons sugar
- 1.5 packets baking powder
- 15 tablespoons flour

For the cream:
- 500 ml milk
- 3-4 eggs (depending on the desired consistency)
- 2 packets gelatin Dr. Oetker
- 2 tablespoons starch
- 2 packets vanilla sugar
- 50 g raisins
- 1 kiwi, diced
- 1 orange, diced
- 500 ml liquid cream
- 7 tablespoons sugar
- 1 can pineapple compote, with syrup

Step-by-step preparation:

1. Preparing the bases:
Start by preheating the oven to 180°C (350°F). Prepare a baking tray that will also be used for assembling the cake. It is recommended to use baking paper to prevent sticking.

In a large bowl, beat the egg whites with the water and sugar until you get a firm foam. Then add the egg yolks, mixing gently. Incorporate the flour mixed with baking powder, pouring it in a rain to avoid lumps.

Pour the mixture into the prepared tray and bake for 20-25 minutes, or until the base is golden and passes the toothpick test. After baking, let the bases cool completely.

2. Preparing the cream:
Start by hydrating the gelatin. Soak the gelatin in 150 ml cold water 30 minutes before preparing the cream.

In a saucepan, bring the milk to a boil together with the sugar, egg yolks, and starch. Mix well to avoid lumps. Let it boil for 3-4 minutes, then remove from heat and let it cool slightly. Add the hydrated gelatin and mix well until completely dissolved.

Beat the egg whites until foamy and incorporate them into the cooled cream, mixing gently to maintain the fluffy texture. Whip the liquid cream until it becomes firm and use 3/4 of it to add to the cream above. Add the vanilla sugar, raisins, and diced fruits.

3. Assembling the cake:
Prepare a bowl or dish in which the cake will set, lining the bottom and sides with plastic wrap. Place the first layer on the bottom of the dish and soak it with the syrup from the canned pineapple. Add half of the cream, followed by the second layer, which will also be soaked. Repeat the process with the remaining cream and finish with the last layer.

Cover the cake with plastic wrap and place it in the freezer for at least 8 hours, ideally overnight, until it is fully set.

4. Serving the cake:
Once the cake is well set, carefully turn it out onto a serving platter and remove the wrap. Decorate with the remaining whipped cream and add fresh fruits for a colorful and appetizing appearance.

Practical tips:
- Make sure the cream is very cold before whipping it to achieve the perfect consistency.
- You can vary the recipe by adding other fruits, such as strawberries or raspberries, for a different flavor.
- The cake can be stored in the freezer for 2-3 weeks, but it is most delicious when consumed fresh.
