To prepare a delicious meal, we start by carefully washing the meat, making sure to remove any impurities. We pat it dry with a paper towel to eliminate excess water, then cut it into suitable pieces so that it cooks evenly. In a large pot, we heat a generous amount of oil, enough to cover the bottom of the pot, and then add the pieces of meat. We let the meat fry over medium heat, stirring occasionally, until all the juice has evaporated and the meat develops a golden and appetizing crust. This process will enhance the flavor of the dish.

While the meat is browning, we take care of the vegetables. We peel the onion, wash it, and chop it finely into cubes. We peel and wash the carrot, then cut it into thin rounds for even cooking. Once the meat is well browned, we add the chopped onion and let it combine with the meat, cooking until it becomes transparent and soft. After the onion has softened, we add the carrot and continue to cook together for 5-10 minutes, stirring occasionally.

After the vegetables have softened, we complete the dish with beef broth or water, enough to cover the ingredients. Then, we add paprika, salt, and pepper to taste. These spices will add extra flavor to the dish. When the mixture starts to boil, we cover the pot with a lid and transfer it to the preheated oven at a moderate temperature, where we let it simmer for about an hour and a half. It is essential to check occasionally, and if we notice that the liquid is reducing too much, we can add a little more broth to keep the meat juicy.

Towards the end of the cooking time, we add the pepper paste, which will further enrich the flavor of the dish. We let it simmer together for another 10-15 minutes to allow the flavors to combine perfectly. The next step is to add freshly chopped parsley, which will bring a touch of freshness and color to the dish. We mix well and, finally, the meal is ready to be served. Enjoy your meal!
