This simple and quick fish recipe with potatoes and pesto sauce is perfect for a light yet flavorful dinner. The combination of fresh herb flavors and the crispy texture of the potatoes makes this dish a true feast. Whether you choose white fish like sea bass or cod, this recipe is sure to impress.
Ingredients:
- 4 medium potatoes
- 2 bunches of fresh parsley
- 40 g cheddar cheese or cheese of your choice
- 60 ml extra virgin olive oil
- Salt and pepper to taste
- 4 fish fillets (bass, cod, or any preferred fish)
- 3 cloves of garlic
- 1 lemon (juice and zest)
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions:
1. Preheat the oven to 200°C. This temperature is ideal for baking the potatoes until crispy.
2. Wash the potatoes well and peel them. Cut them into cubes or thick slices, depending on your preference. Uniformly cut potatoes will bake evenly, achieving a pleasant texture.
3. In a large bowl, add the cut potatoes, 30 ml of olive oil, salt, pepper, rosemary, thyme, and oregano. Mix well to ensure each piece of potato is coated with oil and spices.
4. Arrange the potatoes on a baking tray lined with parchment paper. Fold the edges of the parchment paper to create a small "tray" that will help retain moisture.
5. Bake the potatoes in the oven for 20 minutes until golden and crispy.
6. Meanwhile, prepare the fish. Remove the skin and bones if necessary. In a small bowl, mix the remaining olive oil (30 ml), minced garlic, lemon juice and zest, salt, and pepper to taste. This marinade will add excellent flavor to the fish.
7. After the potatoes have baked for 20 minutes, remove the tray from the oven and place the fish fillets on top of the potatoes. Drizzle the fish with the prepared marinade.
8. Put the tray back in the oven and bake everything for another 10-15 minutes until the fish is cooked through and flakes easily with a fork.
9. Before serving, sprinkle chopped fresh parsley and grated cheese over the dish for an extra burst of flavor.
Serving suggestion: This dish is delicious served alongside a fresh vegetable salad or homemade pesto sauce. You can add some cherry tomatoes and cucumber slices for an extra touch of freshness.
Variations: If you want an extra flavor boost, you can add some chopped green or black olives to the fish marinade. You can also substitute the cheese with feta for a saltier and more flavorful option.
This fish recipe with potatoes and pesto sauce is not only a delicious dish but also an excellent way to enjoy a healthy meal full of nutrients. Bon appétit!
