Veal Meatballs with Mozzarella for Lent
To prepare the most delicious mozzarella meatballs, we will start by finely chopping the meat to achieve a uniform and pleasant texture. Choose fresh beef, which you can chop at home or request from the butcher. This will be the base of our dish. Meanwhile, we take care of the vegetables: we chop the onion into small cubes, crush the garlic, and finely chop the hot pepper, making sure to adjust the quantity according to how spicy we prefer the food.
In a separate bowl, we soak some slices of bread in warm beef broth or, if we don't have any, we can use water. The bread will absorb the flavors of the broth, enriching the taste of our meatballs. After the bread has soaked, we gently squeeze it and add it to the minced meat, along with the previously prepared vegetables. We mix all the ingredients well, ensuring they combine perfectly to obtain a homogeneous mixture.
Once we have a consistent paste, we start forming the meatballs. For an extra surprise, in the center of each meatball, we will add one or two cubes of mozzarella. These will melt during frying, providing a creamy and savory taste.
After shaping the meatballs, we carefully coat them in flour, making sure they are evenly covered, then dip them in the two beaten eggs. This step will help form a crispy crust during frying.
Next, we heat a bath of oil in a deep pan. When the oil is hot enough, we add the meatballs and fry them until they turn golden and crispy on all sides. It is important not to overcrowd the pan to allow the meatballs to cook evenly.
Once ready, we remove the meatballs onto a paper towel to absorb the excess oil. We serve these delights as an appetizer, alongside a fresh salad, or as a main dish, accompanied by creamy mashed potatoes or flavored rice.
