Creamy Tomato Soup with Zucchini
Ingredients: 1 kg of tomatoes, 2 larger zucchinis or 3 smaller ones (in my case), 1 larger onion, 1 bigger carrot, 1 celery, 1 piece of parsley root, 4 tablespoons of oil, salt, lovage or green parsley.
We blanch the tomatoes in boiling water for about 1-2 minutes, then remove them and immediately transfer them to a bowl of cold water to stop the cooking process. This technique will help us easily remove the skin. After peeling them, we cut them into equal-sized cubes to ensure even cooking. Next, we take care of the zucchini, washing them well, peeling them if desired, and cutting them into cubes.
To add extra flavor to the soup, we focus on aromatic vegetables. The onion, carrot, celery, and parsley can be grated on a large grater or cut into small cubes, depending on everyone's preferences. In a large pot, we sauté the onion in a little oil or butter over medium heat. We let it sauté until it becomes glassy and starts to release its sweet aroma.
Subsequently, we add the other grated vegetables, except for the tomatoes and zucchini. We let the mixture soften a bit, stirring occasionally to prevent sticking to the bottom of the pot. After a few minutes, when the vegetables start to release their juices, we add the diced tomatoes and zucchini. We complete with water, making sure to cover all the vegetables, and let it simmer on low heat to allow the flavors to develop.
When the vegetables are cooked and soft, we take the blender or food processor and blend the mixture until we obtain a smooth and creamy soup. If you prefer a more rustic texture, you can use a strainer to achieve a thicker consistency. After blending the soup, we put it back on the heat, letting it boil for a few minutes to intensify the flavors. Finally, we adjust the taste with salt and pepper, being careful not to overdo it, as the vegetables already have natural flavor.
For an extra touch of freshness, we add finely chopped greens, such as parsley or dill, which will bring a pleasant contrast of color and flavor. This vegetable soup is perfect for cool days or when we want to enjoy a healthy and nourishing dish. We serve it hot, perhaps alongside crunchy croutons or a slice of fresh bread, to complete the culinary experience.
