Ingredients:
- 200 g spaghetti
- 1 red bell pepper
- 1 green bell pepper
- 1 small celery
- 2 medium zucchinis
- A few green onions
- 1 white onion
- 1 red onion
- 1 medium carrot
- A few cloves of garlic
- Olive oil
- Tomato juice (300-400 g) made from fresh tomatoes
- Fresh basil
- Parmesan or any cheese you have
- 1 bunch of fresh parsley
- Salt and pepper to taste
- Optional spices: curry, paprika, vegeta
Instructions:
1. Cooking the spaghetti: Start by boiling 2 liters of water in a large pot. Add a tablespoon of salt and a little olive oil to prevent the pasta from sticking. Once the water is boiling, add the spaghetti and let it simmer on low heat. Cook until al dente, about 8-10 minutes, depending on the package instructions. Once done, drain and drizzle with a little olive oil. To stop the cooking, rinse quickly under cold running water.
2. Preparing the vegetables: While the pasta is boiling, prepare the vegetables. Grate the zucchinis and celery on a large grater or chop them into small cubes. Grate the carrot on a small grater. Finely chop the white onion, red onion, parsley, and a few stalks of celery. Cut the bell pepper into thin strips (julienne) and blend the tomatoes to make a smooth puree.
3. Making the tomato sauce: In a large skillet, heat 2-3 tablespoons of olive oil. Add the chopped onion and sauté until translucent. Add the minced garlic and grated carrot, continuing to sauté for 2-3 minutes. The next step is to add the bell pepper and let everything sauté together for a few minutes.
4. Adding the vegetables: Now, add the celery, zucchini, and your preferred spices (curry, paprika, vegeta, salt, and pepper). Cook the mixture until the vegetables are tender but not completely soft.
5. Finishing the sauce: Pour the tomato juice into the skillet and let it simmer on medium heat, stirring occasionally, until the sauce starts to thicken (about 10 minutes). Finally, add the cooked spaghetti to the tomato sauce and vegetables, gently mixing to coat evenly with the sauce.
6. Serving: Before serving, add the parsley and the remaining chopped fresh basil, stirring gently not to crush the pasta. If you want a more intense flavor, sprinkle grated Parmesan on top.
Serving suggestion: These spaghetti with basil and tomato sauce are delicious alongside a fresh green salad or a slice of crusty bread. You can also drizzle some extra virgin olive oil on top for added flavor.
Possible variations: You can replace the zucchini with eggplant or add mushrooms for a richer version. If you prefer a spicier sauce, add a few chili flakes. This spaghetti recipe is versatile and can be adapted to your preferences.
Enjoy this simple and quick recipe, perfect for any occasion!
