Rădăuți soup is a traditional dish that brings a touch of comfort and warmth to every home. This recipe, inspired by the famous 'ciorbitza Gabytzei', is a delicious variant, full of flavor and nutrients. With a perfect mix of chicken, fresh vegetables, and creamy sour cream, this soup is ideal for cool days or for moments when you want to indulge in a comforting dish.
Preparation time: 30 minutes
Cooking time: 1 hour
Total time: 1 hour and 30 minutes
Number of servings: 6-8
Ingredients:
- 2-3 pieces of chicken breast (depending on size)
- 1 parsley root
- 1 celery root
- 1 parsnip
- 3 carrots (2 for the soup and 1 for sautéing)
- 1 white onion
- 1 red onion
- 2 bay leaves
- A sprig of thyme
- Mixed peppercorns
- 300 g of thicker sour cream
- 3 fresh egg yolks
- 2 tablespoons of flour
- Olive oil
- Garlic (to taste)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Preparation:
1. Preparing the ingredients: Start by cleaning and chopping the vegetables. Cut the chicken breast into cubes and the roots (parsley, celery, parsnip) into larger pieces. You can cut the carrots into cubes or rounds, according to preference. The white onion and red onion will be finely chopped.
2. Boiling the base: In a large pot (8 liters is ideal), add about 5 liters of water and bring to a boil the chicken breast along with the chopped vegetables (parsley, celery, parsnip, carrots, white onion, and red onion). Make sure the water boils well, and remove the foam that forms on the surface.
3. Straining: After the meat and vegetables have boiled well (about 30-40 minutes), strain the soup, keeping the liquid in a clean pot. Cut the boiled chicken breast into small cubes and add it back to the soup, along with the chopped carrots.
4. Egg mixture: In a small bowl, mix the 3 egg yolks with the sour cream and flour. It is important to mix well to avoid lumps. Use a ladle to take a little of the soup and gradually add it to the sour cream mixture, stirring constantly.
5. Finalizing the soup: Add the sour cream mixture to the pot with the soup and let it boil for another 10 minutes. This will give the soup a creamy texture and rich flavor. Don't forget to add the crushed garlic, lemon juice, salt, pepper, and chopped greens to taste. In the meantime, you can also add the bay leaves and thyme sprig for flavor.
6. Sautéing the carrot: In a pan, sauté the remaining carrot in a little olive oil. This technique will enhance the color and flavor of the carrot, giving the soup an attractive appearance. After it has sautéed, add it to the soup.
7. Serving: When the soup is ready, remove the bay leaves and serve with freshly chopped parsley on top. This soup is delicious both hot and at room temperature. It can be accompanied by a slice of fresh bread or a hot pepper for those who prefer a bit of spice.
Practical tips:
- Use fresh parsley and celery for a more intense flavor.
- If you like a more sour soup, you can add more lemon juice or even a splash of vinegar.
- Experiment with other types of meat, such as chicken thighs or turkey, for a different variant.
- Replace sour cream with Greek yogurt for a lighter option.
- You can add additional vegetables, such as potatoes or bell peppers, for extra nutrients.
Nutritional information: A serving of Rădăuți soup has about 250-300 calories, depending on the amount of sour cream used. It is rich in protein due to the chicken and contains many vitamins and minerals from the vegetables.
This Rădăuți soup recipe is an excellent choice for a healthy and comforting meal. With every spoonful, you will enjoy a perfect combination of flavors that will delight your senses and bring a smile to your face. Savor the moment and don't forget to share the joy of cooking with your loved ones!
