Roasted artichoke
To prepare a delicacy of fried artichokes, we start by carefully cleaning the artichoke. This process requires patience and precision, as the outer leaves of the artichoke can be tough and inedible. Remove two or three layers of outer leaves, being careful not to damage the delicate heart inside. Then, with a sharp knife, cut off the bottom of the artichoke, ensuring that a good portion of the stem remains, as it contains a lot of flavor. The top should be cut so that you achieve a nice shape, similar to that in the photo.
After cleaning the artichoke, it is important to gently scoop out from underneath, removing the fibrous parts that are not pleasant to taste. Then, cut the artichoke into quarters, thus obtaining slices that will be easy to handle during frying. These pieces will be dipped in a simple mixture of flour and egg. In one bowl, beat an egg, and in another, prepare the flour. This breading process will give a crispy and delicious coating.
In a deep pan, heat the oil to a medium temperature, being careful not to make it too hot, so as not to burn the artichoke. Add the artichoke pieces to the hot oil, being careful not to overcrowd them, so that each piece has enough space to fry evenly. Fry them on both sides until they become golden and crispy, a sign that they are ready. After frying, remove them with a spatula and let them drain on paper towels to absorb the excess oil.
Finally, sprinkle a little salt over the fried artichokes to enhance the flavor and make them even more appetizing. These dishes are served hot, accompanied by a garnish of lemon or a garlic yogurt sauce, which will add a fresh and flavorful note. Enjoy this delicious dish that will bring unique textures and flavors to your table, being a perfect choice for both a family dinner and a special occasion.
