To prepare this delicious recipe, we start by making the dough starter. In a bowl, we dissolve the fresh yeast together with the three tablespoons of sugar. We gradually add 150 grams of flour and warm milk, mixing until we obtain a homogeneous composition, similar to thick sour cream. It is essential to ensure that the milk is not too hot, so as not to destroy the yeast. After we have obtained the starter, we cover it with a clean towel or plastic wrap and let it rise in a warm place, away from drafts, for about 30 minutes or until it doubles in volume.

While the starter is rising, we can prepare the rest of the ingredients. It is important to have all the ingredients at room temperature to facilitate the rising process. After the starter has risen, we add the remaining flour, a pinch of salt, the beaten eggs, and the melted butter. We mix well until we obtain an elastic and homogeneous dough. We cover the bowl again with a towel and let the dough rise for another 30-45 minutes, until it increases in volume again.

Once the dough has risen, we transfer it to a floured work surface. We roll it out with a rolling pin until we obtain thin sheets, then cut them into uniform squares of the desired size. In each square, we place a teaspoon of ricotta, a fresh and creamy cheese that provides a delicate flavor and delicious taste. After filling all the squares, we fold them in half to form triangles or leave them open, depending on preferences.

Each piece is brushed with a mixture of beaten egg and a little milk to give them a beautiful golden color when baked. We preheat the oven to a moderate temperature of about 180 degrees Celsius. We place the filled squares on a baking tray lined with parchment paper and bake them for 20-25 minutes, or until they become golden and fluffy.

After taking them out of the oven, we let them cool slightly, then dust them with powdered sugar for an inviting appearance and an extra touch of sweetness. These delicious ricotta snacks are perfect to be served warm, either as an appetizer or as a dessert, and are sure to impress everyone who tastes them.
